Santoku 7" - AUS10 - Hêtre - Hazaki Couteau d'office Take care of your hatchetThis blade, recently designed by Hazaki Knifes in Montreal, is semi handcrafted in Japan (small business). The handle, meanwhile, is made by a Montreal cabinetmaker. The blade is particularly thin. The core of the knife is made of AUS10 stainless steel, renowned for its edge retention, ease of sharpening and resistance to twisting. The handle, securely fastened with rivets and epoxy, is treated, but will need to be oiled after some time to avoid
